Low-Fat Blueberry Bran Muffins

I made these last night following the recipe exactly. They came out fantastic. I've never liked bran muffins but I want to try eating better. These muffins by no means taste as if they are low fat. My kids, even my picky eater, had 1 for dessert last night, 2 for breakfast and took another for snack time at school. My advice: double the recipe or they'll be gone in a flash!

Supergirl Summer Smoothie

My 9 year old daughter loved this smoothie. We used everything except the papaya. I prepped all the fruit before hand and have it stored in gladware in the fridge so it's very simple to whip this up before school. Very satisfying and filling.

Cranberry Sauce Chicken I

This was so good. I made it exactly as the recipe was written except I substituted Splenda for the sugar. The chicken was fork tender and the sauce was great on both the chicken and rice we served with it. I asked DH and the kids for their reviews and we all loved it. The only change we want to make is to add a little extra cranberry sauce next time. It's a strange mixture of ingredients but they blend together so well. We will be making this dish again next week...if we can wait that long!

Orange Smoothie

My kids and i love this recipe. I used Splenda to taste and doubled the vanilla. It tastes like a creamcicle. Easy to make for the kids before school and Yummy enough to make extra for Mommy!

Banana Muffins II

I made a low fat/low cal version. I double the recipe and used 1 cup homemade applesauce in place of the butter and substituted Splenda for the sugar. I added 2t each of vanilla and cinnamon. They are so yummy. I totalled the nutrition info and each muffin has 89 calories and only .6 grams of fat which is fantastic for a great muffin.
