About this Cook
I'm a full-time mom with three kids who love to help in the kitchen. One of my kids is super picky, one will eat a decent variety but is scared of new foods, and one will try anything--he's not quite four and loves sushi!
My favorite things to cook
Desserts, baked goods, and quick and/or simple dinners my kids will eat. I also love to cook for "special occasions," but just can't put the effort into gourmet meals on a daily basis.

Last year I hosted Easter dinner for the first time. Everything came out perfectly and I got rave reviews, especially for the ricotta cheesecake.
My cooking tragedies
Once when I was a kid, I made a batch of cookies but forgot to add the flour. Another time, not so long ago, I dropped a chocolate cake as I took it out of the oven. And once, I used my food processor to make the crust for a cheesecake, and as our entire family sat down (at a relative's house) for desssert, people started picking bits of plastic from the cheesecake. My food processor "shed" some parts into the crust and I didn't even notice...

Cut-Out Cookies Made with Oat Flour
I really wanted this recipe to be great, but alas, it isn't. I read all of the reviews here and was worried the cookies would be dry. I added 1/4 cup milk to the recipe, but otherwise followed it exactly. The cookies look good and taste good, but they are still very dry. I made sure not to over bake them, too. They literally suck the saliva right out of your mouth. You need a tall glass of milk or cup of coffee to wash these down with, but why bother when there are so many NOT dry recipes to choose from? My kids will eat them so they won't go to waste, but I won't be making these again.

Veal Scallopini
Quick, easy, and super delicious! I made this as a special anniversary dinner for my husband. He loves veal, but we never have it at home because I usually don't care for it. This recipe was very good, even to me! I didn't change a thing, other than to double the ingredients for the sauce because I served the veal over spaghetti. My husband must have told me twenty times during dinner how excellent it was, and this was the first time I've ever made veal!

Banana Chip Muffins I
With a few tweaks, this is a very good muffin. I followed the basic recipe but used brown sugar in place of half the granulated sugar. Also, added a tsp of vanilla and a tsp of cinnamon. I had two large, overripe bananas so probably used more than one cup mashed. The recipe made exactly 12 perfectly sized muffins. Bake time was only 18 minutes for me. Moist, yummy, and sure to be a hit with the kids. As a bonus, the muffins are quick to mix together. Thanks!
