About this Cook
I'm a full-time mom with three kids who love to help in the kitchen. One of my kids is super picky, one will eat a decent variety but is scared of new foods, and one will try anything--he's not quite four and loves sushi!
My favorite things to cook
Desserts, baked goods, and quick and/or simple dinners my kids will eat. I also love to cook for "special occasions," but just can't put the effort into gourmet meals on a daily basis.

Last year I hosted Easter dinner for the first time. Everything came out perfectly and I got rave reviews, especially for the ricotta cheesecake.
My cooking tragedies
Once when I was a kid, I made a batch of cookies but forgot to add the flour. Another time, not so long ago, I dropped a chocolate cake as I took it out of the oven. And once, I used my food processor to make the crust for a cheesecake, and as our entire family sat down (at a relative's house) for desssert, people started picking bits of plastic from the cheesecake. My food processor "shed" some parts into the crust and I didn't even notice...

Cinnamon Cookies II
WOW!! These are some of the best cookies I've ever made, and I make cookies at least twice a week. I did make a few changes after reading the reviews here. I used 1 cup sugar and 1/2 cup brown sugar, added about a tsp more cinnamon, 1 1/2 tsp vanilla, and 1/2 tsp salt. The salt is really needed to compliment the sweetness of cookies. The dough was easy to work with--I just scooped about a tablespoon into a rough ball and slightly flattened it for each cookie. Baked for 8 minutes, and the results were fantastic. I used Silpat baking mats and had no problems with the cookies sticking or falling apart, but did let them cool for a few minutes before removing them to wire racks. I won't even admit how many I ate before the kids got home from school! The cookies are crisp on the outside, but so buttery and chewy on the inside. The flavor is fantastic. I will certainly be making these again soon!

Simple Orange Glaze
The name of this recipe says it all--it's a simple, fresh orange glaze. I made this to go on Big Soft Ginger Cookies (also on this site), and the combination was wonderful. I had to use a bit more orange juice to get the right consistency for drizzling on cookies, but the results were perfect. This is a nice glaze to have on hand for a variety of uses.

Big Soft Ginger Cookies
These cookies are wonderful! I used orange juice in place of the water, chilled the dough for easier handling, baked for 8 minutes, and glazed the cooled cookies with a mixture of powdered sugar and orange juice. They stayed really soft, and tasted great--buttery and full of flavor. I'll be making them again soon!
