I am sensitive to gluten and dairy. Today I had a craving for some mac and cheese. Many of the recipes I looked through calls for baking the mac and cheese. Baking scares me- ok just a little.  I like to be innovative-i think thats why cooking is always such an adventure.  I will look at a recipe with the full intention of following it word for word then by the end, I end up modifying a few things and adding to it.  Rest assured- it does ending… MORE

Perhaps a bit of a set-back, but my fasting BG was 172 today.  :(  I'm not sure why, but I suspect it is the protein again.  I had to use fast-acting insulin today.  Just a bit...but still.  I felt pretty down about it.  I know that I'm not as far back as when I started, and so moving forward… MORE
