This is an easy and delicious take on a Louisiana classic that you can prepare and cook in 40 minutes! I use turkey kielbasa to cut down on the fat, but not the flavor.

My current version of a classic recipe here is still a work in progress, but it's a pretty good one. This is a meal in itself, and tastes even better the next day when reheated.

'I adapted this recipe from a cookbook to eliminate time-consuming steps like browning the sausage and soaking and boiling beans,' explains Brenda Heidoff Leonard of Missoula, Montana. 'Red pepper flakes add zest to this satisfying dish that's chock-full of beans and flavorful sausage.'

With red kidney beans, rice, cheese and plenty of spices, this recipe makes a nice version of a classic dish. It can be served as a main dish, and is quite good when accompanied by a salad and some crusty bread.

Since there's food galore during the holidays themselves, I like giving this zippy mix as an after-Christmas present instead. I just slip the containers of seasoning, beans and rice into a decorative paper bag. A recipe card completes the package.

This is a recipe that my mom made for us while growing up. We live in Minnesota, where SPAM originated, and my father is Puerto Rican; this was an ingenious way for my mother to weave the cultures together. This is a quick and tasty meal, enjoy!

Believe it or not the secret to many bean dishes is lard. Red beans are simmered, slowly, with ham hock. Then the beans and meat are processed in a food processor with spices and lard. The beans are reheated and served over rice.

Good ole red beans and rice with lots of smoked sausage. I put lots of garlic in it which makes it tasty. I take it to my bingo crowd and they love it! Normally I don't measure, so I decided to write it down while I was making it. This is medium on the heat but make it hot as you like!

Filling, flavorful and easy to make, this New Orleans-style dish is a Monday night tradition in Louisiana. And the addition of smoked turkey sausage makes it perfect as a delicious meal all by itself, or as a robust side.
